How to make vegetarian lasagna roll ups

The ingredients

  • 8 ounces sliced mushrooms
  • 1 teaspoon each butter and olive oil
  • 1 garlic clove
  • dash red chile flakes
  • 1 cup chopped walnuts, toasted (bake 8–10 minutes at 350 degrees)
  • 8 lasagna noodles, cooked as package directs, drained
  • 1 26-ounce jar marinara sauce
  • 1 16-ounce container ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 2 tablespoons chopped parsley

Fill a food storage bag with the ricotta filling. Clip off a corner of the bag and squeeze the filling onto the lasagna noodles.

Layer the mushrooms and walnuts over the cheese. Roll ’em up. Here’s the baking sheet I use for Walnut Mushroom Lasagna rolls, cookies, nut toasting and vegetable roasting.

Spoon marinara sauce in bottom of pan (this is the marinara sauce I use). Nestle the rolls in the sauce and spoon a little more sauce over top before baking. This is the baking dish I use.

I grew up in central California, home to lots of walnut groves. I’ve been eating walnuts for as long as I can remember. In fact, my mom used to keep my sister and I busy shelling walnuts. We’d spread newspapers on the patio, sitting cross-legged, each of us tapping walnuts with a hammer to crack the shell and release the nuts. Not sure how many walnuts made it into the kitchen, but my sister and I prefer to buy them shelled these days!

Ingredients

  • 8 ounces sliced mushrooms
  • 1 teaspoon butter
  • 1 teaspoon olive oil
  • 1 garlic clove, smashed
  • 1/4 teaspoon salt
  • dash red chile flakes
  • 1 cup chopped walnuts, toasted (bake 810 minutes at 350 degrees)
  • 8 lasagna noodles, cooked as package directs, drained
  • 1 26-ounce jar marinara sauce
  • 1 16-ounce container ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 2 tablespoons chopped parsley

Instructions

  1. Mushrooms: Melt butter and oil in a large skillet, over medium heat. Add mushrooms, garlic, salt and red chile flakes. Stir occasionally, cooking 10-12 minutes, until mushrooms are softened and browned. Set aside to cool. Remove garlic clove.
  2. Preheat oven to 350°F.
  3. Walnuts lay in single layer on baking sheet, toast 8-10 minutes. Cool while preparing other ingredients.
  4. Rolls Spoon marinara sauce into 12 x 7-inch baking dish, reserving 1 cup sauce.
  5. In medium bowl, stir together ricotta, Parmesan, egg and parsley. Scoop into a gallon-sized plastic bag. Clip off corner of bag. Lay lasagna noodles out flat. Squeeze cheese mixture down center of each lasagna strip. Layer mushrooms over cheese. Sprinkle walnuts over mushrooms. Roll up noodles. Use a gentle touch so cheese doesn’t ooze out of noodle. Place seam-side down in baking dish. Top with remaining sauce. Bake 35-45 minutes, until heated through.

  3. I would like to make this recipe, but would like clarification as to how many mushrooms are actually called for. The recipe lists the following:

    1 cup cooked mushrooms
    Mushrooms
    8 ounces sliced mushrooms

      Hi Lynn, thanks for the question. I see the confusion as I was explaining how to cook the mushrooms. 8 ounces of fresh mushrooms cook down to about a cup of cooked mushrooms. Give or take a few mushrooms won’t hurt the recipe. Hope you like these rolls as much as I do!
