1 tablespoon olive oil
8 eggs
1 to 2 cups chopped vegetables such as mushrooms, asparagus, red peppers, spinach
2 tablespoons Parmesan, grated
1/4 cup feta cheese or goat cheese, crumbles
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon flour
1/2 teaspoon baking powder
Instructions
Preheat oven to 350 degrees F.
Heat oil in an ovenproof skillet over medium heat. Add the mushrooms and cook about 6 minutes, stirring occasionally. Add the asparagus and cook 5 minutes.
Meanwhile, whisk the eggs in a large bowl, stir in the cheese, salt and pepper. Sprinkle the flour and baking powder over the egg mixture and stir just until mixed.
Pour the egg mixture over the vegetables and place the pan in the center of the oven. Bake until frittata is browned and puffed, about 30 minutes until a knife inserted into the center comes out clean.
