Meatloaf Egg Muffins

Crumble meatloaf into an egg custard and you’ve taken dinner over to breakfast. Meatloaf Egg Muffins are a great way to make a bestover!

  • 1 cup meatloaf, diced
  • 6 eggs, well beaten
  • ½ cup shredded cheese, use Cheddar, Monterey Jack, Pepper Jack, or mozzarella
  • ¼ cup milk
  • 1 tablespoon Sriracha or hot pepper sauce
  • ½ teaspoon salt
  • ¼ teaspoon pepper


  1. Preheat oven to 350˚F.
  2. Line muffin with with paper liners or lightly spray the cups with cooking spray.
  3. Combine all ingredients. Pour into muffin cups and fill to ¾ full. Bake 15-20 minutes until mixture is set and lightly browned.
