6 eggs, well beaten
½ cup shredded cheese, use Cheddar, Monterey Jack, Pepper Jack, or mozzarella
¼ cup milk
1 tablespoon Sriracha or hot pepper sauce
½ teaspoon salt
¼ teaspoon pepper

Instructions

Preheat oven to 350˚F.
Line muffin with with paper liners or lightly spray the cups with cooking spray.
Combine all ingredients. Pour into muffin cups and fill to ¾ full. Bake 15-20 minutes until mixture is set and lightly browned.
