How to make summery, fresh Watermelon Salsa

With just 5 ingredients, spoon this homemade Watermelon Salsa over grilled fish or chicken for a quick, light dinner!

Move over tomato salsa. It’s watermelon season!
I’ve eaten my way through lots of homemade salsas. Tomato salsa, mango salsa, salsa verde, corn and black bean salsa, and pineapple salsa. But here’s another salsa twist: Watermelon Salsa.

What is salsa?

Spanish for “sauce,” salsa can be a cooked sauce or a fresh mixture. Salsa typically includes some heat such as jalapeño, serrano or habanero chiles and some tangy acid from lime, lemon, or orange juice. The combinations are only limited by your imagination.

I think salsa is the little black dress for a chicken breast or fish filet. Fresh ingredients make it one of the easiest flavor boosters around. Homemade salsa is a great way to repurpose fruits and vegetables. But it makes putting a healthy dinner on the table so easy.

Fresh salsa recipe combinations

‘Course you know about salsa made from tomatoes, jalapeño and lime juice, but here are some other combos.

  • mango, black beans, red onion
  • avocado, oranges, red pepper
  • tomatillos, green chiles, cilantro
  • pineapple, cucumber, mint
  • jicama, oranges, red kidney beans

When is watermelon season?

Watermelon is one of summer’s best gifts. Buy it during summer when the fruit has time to develop maximum flavor by ripening in the sun.

How to buy a watermelon

In choosing a watermelon, give it a good look. You’re looking for a firm, symmetrical melon that is free from bruises, cuts, or dents. The underside should have a creamy yellow spot. That’s the spot where it sat on the ground and ripened in the sun. After the viewing, pick it up – it should be heavy for it’s size. True to its name, watermelon is 92 percent water, which accounts for most of its weight and its name. That high water content means watermelon is low in calories. Just 50 calories per cup.

How to store watermelon

Once home, rinse the melon in running water, no soap, and pat dry. Cut it with a clean knife. Watermelons can be stored at room temperature for a week but once it’s cut refrigerate, please.

Is watermelon healthy?

It is.

Watermelon is a lycopene leader among fresh fruit and vegetables. A plant pigment found in only a few red foods such as tomatoes and watermelon, lycopene may help to prevent prostate cancer and reduce the risk of heart disease. A deep-red watermelon has more health promoting lycopene that a semi-ripe one.

Watermelon Salsa

Summery, fresh, sweet and spicy. Top grilled fish or chicken. It’s even chip worthy served in a cute dip bowl. Two different color peppers make this pop, but use one color if that’s what you have on hand.

Dice a couple cups watermelon, chop a jalapeño, some red onion and pepper, toss in some parsley (or cilantro) and squeeze lime juice over.

Stir everything together. Be sure to chop the peppers and onions into similar sizes so they blend together.

Substitute cilantro for parsley. Or try other fresh herbs. You can use all orange or red pepper if you don’t have a variety on hand.

Cook’s note: You don’t want to make this too far in advance because the watermelon will releases juices and may it rather sloppy. Though you could drain off some juice and serve with a slotted spoon.

  • 2 cups watermelon, small dice
  • 1 jalapeño, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup yellow pepper, chopped
  • 1/4 cup orange pepper, chopped
  • 1/4 cup parsley, chopped
  • 1 lime, juiced


  • Combine all ingredients in medium bowl. Toss gently. Serve over grilled fish or chicken. Or serve as a salsa with chips.
