I’m an entertainer.

I don’t sing and dance (publicly ;-), but I like to invite people over for dinner.

That’s my kind of entertaining.

When I’m creating the menu, I can easily pull together ideas for the dinner and dessert. Appetizers are where my spotlight dims. By the time I’ve shopped, prepped, cooked and set the table, the pre-dinner cocktails and small bites usually get shorted. Cheese, crackers, nuts, vegetables are my go-to happy hour appys.

Local, Seasonal, Simple and Inexpensive Herb and Flower Greek Yogurt Dip

To make this recipe I walked around the yard and picked a few herbs and flowers. That’s about as local, seasonal, and low maintenance as you can get.

I’ve sprinkled herbs over cheese, rolled cheese balls in herbs, flavored butter with herbs, tossed herbs and flowers in salads, and frozen both in ice cubes. But a recipe for dandelion jelly made me look at weeds differently. If you aren’t a gardener, no problem, pick up herbs where you shop. Edible flowers may be found in the produce section, but don’t use those found in the floral department because they likely have been sprayed with some sort of life extender.

Spread thick plain yogurt on plate and sprinkle with edible herbs and flowers. That’s it!

The ingredients

  • 1 cup plain Greek-style yogurt, or strain 2 cups yogurt to get the 1 cup
  • 1 tablespoon torn herbs and flower petals, such as basil, tarragon, parsley, thyme, lavender, chives, dandelions, roses, calendula, nasturtiums, geraniums, pansies and Johnny-jump-ups
  • pinch of coarse salt
  • pinch of freshly ground pepper

Shop your yard safely for edible flowers

  • Choose the edible varieties.
    • Lavender, chive blossoms, dandelions, roses, calendula, nasturtiums, geraniums, pansies and Johnny-jump-ups are just a few that are safe and edible to use in cooking. But there are more options. Find some by the North Carolina State University Cooperative Extension and by the University of Minnesota.
  • Use plants with either no pesticides or only pesticides labeled for edible crops and without the application of animal manure to the surrounding soil in the past four months.

Why I like Herb and Floral Yogurt Spread

It’s my perfect solution for entertaining!

  • I drain the yogurt the day before, so no complicated steps.
  • I snip and clip from my own yard, so no extra trips to the store.
  • It comes together in less than 10 minutes, so is super quick and easy. I spoon it in a bowl or spread it on a slate board.
  • Crackers are a pantry item, so available when I need them. But I also like to serve with these homemade fruit and seed crackers.
  • The yogurt is a protein-rich, lower-fat, better-for-you option than most dips and spreads.

How to Strain Yogurt

To strain yogurt, line a strainer or colander with coffee filters, paper towels, or cheese cloth. Spoon 2 cups plain yogurt into strainer. Set the strainer over a bowl. You want the strainer raised from the bottom of the bowl to it’s not sitting in the drained liquid. Cover with plastic wrap and refrigerate 12-24 hours. The goal is to remove as much of the liquid whey as possible so the spread stays firm, not runny.

Ingredients

Instructions

  • To strain yogurt  Line a strainer or colander with coffee filters, paper towels, or cheese cloth. Spoon yogurt into strainer. Set the strainer over a bowl. Nest the strainer in the bowl but you want the strainer raised from the bottom of the bowl to it’s not sitting in the drained liquid. Cover with plastic wrap and refrigerate 12-24 hours. The goal is to remove as much of the liquid whey as possible so the spread is firm, not runny. Two cups yogurt will result in about a cup of strained yogurt.
  • Herb Spread: Spread yogurt on a food-safe plate. Sprinkle herbs, flower petals, salt and pepper over.
  • Dip may be chilled 3-4 hours before serving which also helps flavors develop.
