Healthy nachos help you LiveBest
Sharing food feeds your soul. When you eat with others you connect and laugh and learn. All those things add up to make us feel better. Nachos are a perfectly shareable meal.
What I like best about this recipe is that nachos are fun and people love them. Have you tried  Apple Nachos?
Sweet Potato Nachos are also quick to fix, easy clean up, and economical.

How to cut sweet potato
Scrub the potatoes. Slice (with skin on) the potatoes evenly, about 1/4-inch thick, so they cook evenly and give you enough body to pop all those luscious toppings into your mouth. To keep your cutting board from slipping as you slice, place a kitchen towel under it or use one with rubber grips such as this Oxo cutting board. I use cutting boards you can put in the dishwasher. Cleanliness is a good thing!
Ways to use beans
- White bean dip
- Greek salad with tuna and beans
- One pot baked Greek chicken stew
- Gallo Pinto (black beans and rice)
- Black Bean Quinoa Salad

I occasionally make a similar dish with sweet potato chips from the store. This would be a healthier version! Great idea!
Thanks, Erin! One sweet potato was enough for two of us.

Thanks, Marie! Let me know how yours turn out, Marie
Canola oil is not healthy. Try avocado oil instead.
Avocado or olive oil are fine substitutes.
